Numerical estimation of sublimation front position in spin frozen skimmed milk during immersion drying method

Resumo

Transient analysis of sublimation front movement in spin frozen skimmed milk is numerically investigated in an immersion freeze drying process. The sublimation interface position is predicted by applying finite element analysis using COMSOL Multiphysics. The numerical analysis is conducted using an arbitrary Lagrangian-Eulerian (ALE) scheme coupled with heat and mass transfer for a uniform annular pattern of ice dried at different bath temperatures at -10°C and 10°C. The uniform annular pattern is represented as a rectangular slab of ice in the proposed model. The effect of bath temperature on the interface position movement, drying time, and product temperature are studied. It is observed that the drying time of the uniform annular pattern dried at a bath temperature of 10°C is lower by 14% compared to operating at -10°C. The numerical study observed that operating at a higher bath temperature significantly reduced the drying time. The sublimation interface position assisted in predicting the endpoint of the drying stage. The numerical study revealed that the drying time depends on the bath temperature during the immersion drying process. The numerical results (product temperature, drying time) are observed to be synonymous with the experimental result.
