Coupled fluid flow and simultaneous heat and mass transfer model for convective drying of potato

A 3-D numerical model using a commercial software COMSOL Multiphysics has been developed to solve coupled heat, mass and momentum transfer during convective drying of potato. Three different modules of COMSOL Multiphysics - flow module, heat transfer module and species transport module for liquid and vapor phases have been used. The proposed model solves simultaneously the transport equations in the air domain as well as in the porous domain of potato with a continuity of temperature, heat and mass fluxes at the food and air interfaces. The drying air temperature for the convective drying are chosen as 313, 323 and 333 K respectively. The temperature and moisture distribution inside the cubical potato sample at different inlet temperature are predicted through simulations. Further drying rate of moist food under different operating conditions are estimated. The simulation results are in good agreement with the experimental data.
